CALAMARI IN RED WINE SAUCE
1.5kg calamari, wash & cut wings & tentacles into medium size pieces.
1 litre milk
*Place calamari in 1 litre of milk over night to tenderise
3 large onions, chopped finely
1 cup dry red wine
4 heaped tablespoons tomato paste
2 cups water
3-4 bay leaves
2-3 cinnamon sticks
10-12 whole cloves
Salt, to taste
Pepper, to taste
½ bunch flat leaf parsley, chopped
REMOVE calamari from milk and rinse well with water.
IN a saucepan sauté the onions, then add the calamari and brown.
ADD red wine, tomato paste, water, bay leaves, cinnamon sticks, whole cloves, salt and pepper and stir on low heat.
ALLOW to simmer with lid on, for approximately 50 minutes.
REMOVE lid and stir in parsley, simmer for another 10 minutes.
